How to start from a stand still with stick shift Ford escort zx2?

About what should the RPM guage read when starting from first gear. I try to keep it below 1500 but stall out sometimes, wheras 2000 seems too high but works better. I just want to be able to take off fast at a stop light without slipping or dropping the clutch. Thnx!
