How to prevent the rubber taste of cheese when cooked?

i cook cheese onto burger patties to make cheeseburgers, but most the time they have a rubber taste to them that makes me want to gag. how to prevent that from happening or is there a better cheese? i normally use cheddar or swiss.
 
You shouldn't be cooking the cheese. Just melting it. Put the cheese on just at the end. The main problem may be the type of cheese. Try blue cheese, provolone, brie, etc. And throw some caramelized onions or mushrooms on there too.

Try this: The cheese inside the meat. Start with fairly large say 1/4" cubes, not shredded. And fold the cheese into the meat gently. That way the cheese just melts while the meat is cooked.
