How to make fish taste good like in the south?

Okay, first you need some peanut oil for best results. or a good frying oil like wesson that will make a lot of difference in the outcome. Don't get that cheap oil!. A mix of cornmeal, flour, paprika, tad of garlic powder, sae salt, cayenne. pepper and black pepper. Put that is a paper bag or a good sized bowl with a lid so you can shake it up.
You could get some of that seasoned corn meal mix in the flour section. You want your fish to be fairly dry but still a lilttle damp so the meal will stick. Heat teh oil to 360, make sure it's hot before you add the fish. Shake the fish in the cornemal mix and shake excess off, drop several peices in, not to many so they willhave room to move and cook evenly. They will take about 10 minutes, they will start to float freely, and become crisp. Removce and drain on a rack, do not cover they will get tough and soggy!

3 cups fine ground cornmeal
1 cup all purpose flour
3 heaping tablespoon of paprika
3 level tablespoon of black pepper
1 teaspoon of garlic powder
3 Tablespoons of salt or more, test fry a peice and adjust the salt.
1 Tablespoon cayenne
Pot of oil half full so it doesn't overflow. Heat to 360. Cook 3 or 4 peices at a time depending on the thickness and size. They must have room to move freely.

I'm from the south, do you mean blackened fish or just fried fish?
