I know mushroom contains lot of water so after you cook it, it loose all water and yields go really down. Right now i am getting about 55% yield on button mushroom after cooking. I wanted to get it to 60 to 65% yield. I know i am not going to get 70% or more. I tried ice and it helped little to get yield from 52 to 55%. i cook button mushroom 3000 pounds a day for a food manufacturing company. I get about 1600 pounds cooked mushroom out of 3000 Raw material. Any suggestion?
