how to get started in the restaurant business?

my dream is to be a cook. i worked two years in a kitchen at olive garden while at university and now, since i graduated, i want to go back and pursue a career as a chef. i'd opt for a culinary academy, but i think more experienced is earned in the kitchen itself. how do i go about doing this? do most people start off as dishwashers and move up gradually? do i keep pestering the staff about wanting to be on the line, cooking, until i finally get my way. :p

any tips would be appreciated!
