How to fish for Reds, flounder, and trout?

I m new at red fishing. I bought a saltwater boat and am interested in learning. I have been on chartered trips. I use the boat in fresh water a lot too, so I know about fresh water fishing. My questions are I will probably be using live shrimp. Do I need weights? how heavy? Do I use a cork? Do I fish on the bottom? Shallow water or deeper water? What size hooks? Should I use any artificial bait? Any advice would help. I am going to Biloxi, MS to fish and I am leaving today.
 
i am from matagorda tex. about all i fish with is artificial. when you go out in the bay look for birds that is feeding. go up wind drift to the birds. trout smell like water melons. they will be a oily slick. trout throw up while they feed. use artificial or live shrimp. finger mullet. small crokers is good. reds will hit fresh dead live. crokers is the best. flounders fish with finger mullet or artificial. some time you fish on top. flounder will be on the bottom. i fish for flounder with a lantern and a gig at night. good luck.
