How to do a DIY Wedding Buffet?

You have good advice here already.

We have a DIY buffet style reception. Fortunitly my future MIL used to run an awesome catering buisness so she's handling most of it. But we did roast beef with a variety of sides. Roast beef seems to go well with almost anything and makes an awesome after-party-sandwich LOL.
 
It can be done! I did my own wedding buffet.
Have a good few meats roasted, like a large beef, ham, roast of tonnes of chicken legs with a nice marinade on them, and maybe have a whole salmon poached. These are the mains, place evenly along the buffet table. Then, make a huge amount of pasta, and turn it into various pasta salads, have this in pretty bowls, also evenly spaced onthe table(s). Now, make a huge bunch of salad, dress with different dressings (oh, make cute labels for each dish, nobody like guessing what they are eating) Split into bowls blah blah. Then make the little 'bits' that people can fill gaps with, sausage rolls, vol-au-vents, boiled potatoes, mini jacket potatoe skins....all of this can be done maybe two days in advance and kept chilled untill travel time. Pack into cool-bags and put in those frozen cool things that are blue....

I don't want to have to pay hundreds on a caterer so I'm hoping to do it myself (with help from friends!)
The wedding venue is 2 hours from the house so Im not too sure how to do it and still have fresh food on the day.
If anyone has any ideas please let me know!
