How to cook rice for only one person?

I'm used to cooking rice for a lot of people (Big Family, 7 siblings)

But now, I plan on dieting and cooking brown rice. Since they don't like the stuff (and not as chubby as I am), I plan on cooking for only a serving. The problem is I either get it undercooked or burned, help me out guys...

brown rice takes longer and needs more water than white rice.

1. Put brown rice and water together in a pot with a lid. Use 1.5 cups of water for each 1 cup of rice.
2. Set the heat to maximum, and bring the rice/water to a boil uncovered. Then put the lid on the pot, and reduce the heat to low/simmer. If your lid has a steam valve, keep it closed. Let the rice simmer for 20 minutes.
3. Turn off the heat, and let the rice sit in the covered pot for another 10 minutes.
 
When I make stir fry for 3 people I use 3/4 c. rice and 1 1/2 c. water, plus about 2 Tbsp. olive oil and salt. So, for 1 person I would use 1/4 c. rice, 1/2 c. water, about 1 Tbsp. olive oil and a little salt. Bring it to a boil, then lower the temperature, cover and simmer for about 15 - 20 minutes. You can check it as it gets close to the 15 minutes to make sure there's still water so it doesn't burn. It seems like it takes a little longer for all of the water to cook out when it's brown rice. As long as it has water it won't burn. Brown rice is a little "harder" than white rice. You mentioned it being undercooked. I wonder if it's undercooked or if it's just the brown rice texture. I usually mix brown & white rice when I make it. You might try that and see if it works better for you.
