Im looking for a recipe to cook a King Prawn Butterfly served in indian restaurants. Its not lots of little king prawn butterflys is just one big King Prawn Butterfly like in the picture link provided.

How do they do this as you can see its looks like one prawn tail? Would they beat it, flatten it out?
I've looked on google/ask for recipes and cant find anything but little king prawn butterflys. Just need a recipe for one big king prawn butterfly like in the picture.
