How to cook cod in a tomato based sauce?

Hi, i want to cook a meal for my bf, hes from africa so eats a little diffrent to us. I know he loves fish in a tomato sauce, but i cant find a recipe for this, does anyone know how to cook it please?
 
try try allrecipies.com its really helpfull, if you dont have a certain ingridient ittl tell you what u can do instead...you can alos bake the fish in the oven with cheese and itss really good!
 
My father-in-law cooks cod in tomato sauce. I am not sure of the exact recipe but I do know the basic steps, so I hope this helps :)
(If it is salted cod, make sure to soak in cold water in the fridge overnight). In a large pan on the stove, add a couple glugs of olive oil. Heat over medium heat and add one small onion, minced fine & one sweet red pepper minced fine. Cook until the onions are clear but not brown. Add 3 cloves garlic, minced fine and give it a quick stir. Cook the garlic for only about 2 minutes, then add 2 cans crushed tomatoes, 2 teaspoons salt, 1 teaspoon black pepper, a splash of red wine and chopped fresh parsley and basil. Add crushed red chilies if he likes spicy. Bring to a simmer over low-medium heat and add the fish (well drained if it was soaking). Cook for an hour over low heat, partially uncovered. Never allow the sauce to boil, it will ruin the tomato flavour. Serve with crusty buttered brown bread to sop up the sauce & enjoy!
