How to cook boneless/skinless chicken breasts?

Basically how do you cook boneless skinless chicken breasts without them getting dry? I dont want to fry them, so whats the best way? plz help
 
This is sooo yummy:

Six pieces of boneless skinless chicken
16 ounces of sour cream
One can of cream of chicken soup (do not add water)
2 sleeves of Ritz crackers
One stick of butter (melted)

Cut up chicken into bite sized pieces and boil until no longer pink. Drain. Mix sour cream and soup and pour over chicken; mix until evenly coated. Melt butter and mix with crackers … sprinkle on top of chicken mixture in casserole and bake 350 for 20 minutes.
 
It is best to grill them on a rack in a pan in the oven, about 6" from the heat.

Season with a little S & P and oil
Pound lightly the thicker end for uniform thickness and grill for about 4 minutes per side.
 
Make a cordon bleu, all it takes is ham and swiss cheese... thin chicken out to about an 1/8 of an inch, roll ham and cheese into chicken, make sure ends are tucked in well, dust with flour, put into egg wash, and roll in bread crumbs, bake at 350 for 30-40 min, can then make a good white wine and mushroom sauce to go over it... wonderful!!
 
Marinate or brine your chicken breasts overnight if you can. Use an "acid" and oil based marinade (my favorite is Italian dressing) Preheat oven to 350 degrees. Place chicken breasts in baking dish and add 1/2 cup white wine. Cover and bake 35 minutes (if they're really thick, cook 45 minutes). Remove cover and baste. Cover and let sit for 10 minutes. The meat will continue to cook and the juices will redistribute.
