i believe you put the eggs in cold water and then put on high heat and wait for it to boil then turn down the heat to low for 10 minutes...is this correct?

Hi: Sounds right to me - then when they are done, drain off the hot water and fill the pan with cold water. Let cool for a minute or so then crack the eggs while they are in the cold water and it makes them easier to peel (the shells shouldn't stick to the whites)

No. When the water comes to a boil you take the pan OFF the heat, cover and let sit for 15 minutes.

Don't turn it down to low... just turn it down to the point where it won't boil over. Try for 15 minutes. Remember to put the eggs into water and ice as soon as you remove them from the heat. Check the water to make sure it stays icy cold. When your eggs are cold to the touch they will peel with no problem.
