How to cook a fillet of cod?

Ok I am trying to eat at least a piece of fish a week for healthy reasons.

Although I have never been a fish lover and I just don't like salmon and cockles,muscles etc !

I have just bought a fillet of cod. Do I just wrap it in tin foil and stick it in the oven or place it on tin foil and put it in the oven? Should I fill it with tomatoes ,onions,lemon or anything ?


Any advice would help.Also any advice about tasty fish I can try.Don't really want anything too strong? Theres something about salmon I don't like, the smell and the taste !
 
Definitely try tilapia and you can try adding spices...if you cook onions, ginger and garlic first in oil. Then add some cayenne pepper, coriander powder, curry powder, lemon, and salt. Tomatoes, plain yogurt, and vegetables are optional, but this is a great taste for any type of fish!!
 
Although this doesn't answer your question, you could have this stew in the future !

Fish Stew

used cod, tilapia, sole with good results.

* 6 Tbsp olive oil
* 1 cup of chopped onions
* 2 large garlic cloves, chopped
* 2/3 cup fresh parsley, chopped
* 1 cup of fresh chopped tomato (about 1 medium sized tomato)
* 2 tsp of tomato paste.
* 8 oz of clam juice (or shellfish stock)
* 2/3 cup dry white wine
* 1 1/2 lb fish fillets (use halibut, cod, sole, red snapper, sea bass), cut into 2-inch pieces
* Touch of dry oregano, Tabasco, thyme, pepper
* Salt
Method
1 Heat olive oil in heavy large pot or Dutch oven over medium-high heat. Add chopped onion and garlic and sauté 4 minutes. Add parsley and stir 2 minutes. Add tomato, tomato paste and cook 2 minutes longer.
2 Add clam juice, dry white wine, and fish and simmer until fish is cooked through, less than 10 minutes. Add seasoning. Salt to taste. Ladle into bowls and serve.
