How should I cook my fatty pork?

It has a lot of fat on it, looks like bacon except it's supposed to be pork roast but I cut it up into divisions because I'm the only person in this household.

Should I fry the fatty slabs as if it were bacon? How should I prepare it, any tips? I'm not afraid of fat, just so you know!
