How much lime juice is needed to help preserve fresh made salsa?

I make and sell a very good salsa. I do not use any preservatives however I do use lime juice for flavor but I have found out that it is also a preservative because of the citric acid. I am currently using about 3 oz of lime juice per 4 pounds and it keeps for about 3 weeks.How much lime juice per pound should I use. Is 3 enough or should I use a little more Also, does the acid in the tomatoes help preserve it as well. Thanks
 
I make it every year and I don't use lime, citric acid or any other preservative if you choose to add salt to it it's only for taste and nothing else, I boil it for 2 hours in a large pot on the stove , fill the jars and seal if there are any nicks in the jars air will get in and the juice will spoil so make sure that the metal lid is well sealed and you will hear a pop when they do seal , you can make salted sauce or unsalted if you wish.
