How much food should we buy when preparing a buffet for 100 people?

We will be preparing a cold buffet of sandwiches, chicken drumsticks, sausage rolls, cocktail sausages, cheese and crackers, quiche, cake etc. for a fund-raising event. We were wondering how to work out the quantity for each item e.g. loaves of bread? Thank-you for any assistance.
 
Take each item and determine how much one adult would eat of that item. For example- chicken drumsticks 2-3 so you need 250-300 drumsticks.
Quiche- you control how to cut it so if you slice it thin and get 16-20 slices per quice and each guest has 1 slice then 5 quiches should be enough. Same with cake. Pre-slice it and have 150 slices. For sandwhiches plan on 1 per person. A typical loaf of bread has 30 slices and will make 15 sandwiches so you'd need about 7 loaves.
Always plan for more so you don't run out. But I also know that 30% of people will be a NO-SHOW. Better to be safe than sorry. Good luck!
 
I think you should call a catering company and ask about a price range and how much you will need for each person. I think it would be much easier and cheaper for you to have this catered. That way you do not have all the headaches that go along with it.
