How long should I cook a whole chicken for?

I am putting a frozen whole chicken (approx. 5 lbs) in the crock pot tomorrow. Now, I took it out of the freezer tonight; so it will be partially thawed. Please do not tell me that I shouldn't put a frozen chicken in the Crock Pot - that is irrelevant. I'm wondering how long I should cook the semi-frozen chicken in the Crock Pot on low (it is Crock Pot brand)? And, is it true the longer you leave the chicken cooking, the more tender the meat will be? Or will it get tough and taste bland?
If its relevant, I seasoned the chicken with sage, marjoram, and garlic and I'm putting the chicken over a bed of carrots, celery and onions in the Crock Pot.
Sorry everyone, I did put the chicken over 2/3rds a cup of water. I will cook it for 8 hours on low. My crock pot does switch to warm after 8 hours and I'm usually home within 10 hours.
