M Miz Lamb Guest Mar 22, 2009 #4 the WHINE never evaporates!! I wish it would! the alcohol does evaporate from WINE in about 10 to 15 minutes while cooking. the amount of alcohol left in the food is the same as the amount of alcohol left in a cake from putting vanilla extract in it.
