How long can I keep cooked salmon frozen? How do I unthaw it?

We had lots of leftover salmon steaks and chicken breasts, so I froze them in zip-lock bags. I've heard people say that it will worsen the taste, but I'm not sure. Was this a bad idea? Should I put them in the microwave defroster or let them thaw in the fridge for a day or so? How long is safe to keep these in the freezer? Thanks in advance.
