How exactly does broiling cook your food differently from just baking?

I want to make bbq chicken but i want it to have a crunch to it and somone said to broil it for the last ten min or so of cooking. Why would it make it crunchy?

in other words....a broiler can burn or brown the tops of things....like it can brown a roast, or sear something. Its the thing in the top of your oven....
But you have to watch it---it can burn very quiclky...

Baking is the process of cooking with heat all around the bird. To make it crispy or crunchy, broiling for a little while will make a lot more heat, over 500 degrees verses 250 to 350 for baking. It uses the full heat of the stove to finish off the cooking process and make the outside a little crisper.
