How does cooked bacon crumblies (like the ones you use for quick salads) stay good for..

...so long? Like when you buy a huge bag of them at Costco or somewhere else. The only ingredients I see are bacon and salt, but when you look up the shelf life of pre-cooked bacon kept in your fridge (like if you cooked bacon normally yourself), it's only 3-5 days. Is it that little oxygen packet inside or is it something more?
