How do you use herbs properly in cooking?

Hi,
I need to know how to properly use herbs...
They were never used in my house and now im stuck with whow to use them properly to bring out flavour.

Is there anyone who knows a website or just straight out of your head, when using common herbs (everything you class as common) like if i were cooking red meat in a grill for example what would be the best herbs and spices to use to bring out the flavour in the meat and of the herbs...

I dont have alot of recipes...this is just say...if i was cooking simple meat and vegies...

I was never taught how to cook, and i never saw my mum using herbs in cooking so although I'm aware of basic herb/meat combos I've had to figure out the rest myself.

The best method is trial and error - if you think that herb might taste nice with that meal then try it and find out. It's probably not going to taste offensive so you aren't likely to ruin meals like this if and when you get it wrong.

You can also buy seasoning mixes that combine herbs and spices with salt and pepper and have recommendations on the back for what meats to use them with.

I'd also recommend investing in a good basic cookbook - the recipes will give you an idea of what goes with what.

Her are some basic herb/meat combos:
chicken/rosemary
lamb/mint
beef/rosemary/sage
for a curry you'll want to use coriander, cumin, ginger & maybe a little chilli.
for grilling meat, use lots of salt, pepper, rosemary and maybe some garlic granules.
for a stew, use celery salt.

Follow your recipes on what spices to add. Also experience will be of big help. Also most good spice jars have info on them for what they should be used in. The web also has this info.
