How do you turn off camera flash on enV Touch?

I just got it today, and it's a new model. Also how do you set a picture as "Me" when messaging other people? Answering either question will be great.
 
Im not sure about the picture thing but to turn the flash off, you turn on the camera and then it says touch screen for setting menu, so you touch it. Then a menu will come up either on the sides or on the top depending on how your holding the phone. Then you click on the thing that looks like the lightning bolt and put it on flash off.
