How Do You Trim "Around" Images With Any Adobe Photoshop Program?

I "don't" mean in a square like a crop, but where you have "freedom" to actually trim the "outline" of a person or item, around a person's shoulders and head, and remove them from the background so you can add the person to, say, "another" background?

I have adobe cs4, free trial and wanted to see what i could do with this. Thank you!
 
You can use the Lasso tool.

Shift + clicking will add whatever you select to your current selection
Alt + clicking will subtract whatever you select.
