How do you talk a mechanic down in price?

Im really not good at this. I don't know much about car engines. So usually i get worked over and just fork over the money. When i had a lot no problem, but now i want to get my engine fixed in my car. Which to be honest im not for sure about how much its going to cost but i need to have a little advice on how to make a good deal.

Does anybody have any good advice?
im not trying to rip anybody off but im not trying to get ripped off as well.
