How do you properly remove fish from a tank for maintenance?

Please do not tell me you dont have to remove them etc, as this is not normal maintenance and I need to remove them...

ok well I need to remove my fish for doing a change in my tank, and I have never done it before... do you just put them into seperate cups or something? will the fish be okay in such a small space?

My tank contains: 3 small tetras, 2 dwarf aquatic frogs, 2 zebra loaches, 1 angelfish, and an apple snail

also, what about dwarf aquatic frogs? or is it not possible
ps - i am changing gravel to sand, ive been told i need to take fish out while im taking out the gravel then adding the sand as they will get way too stressed...

my tank is 23 us gallons.

i hesitated to post this at first cuz i dont want comments telling me sand is bad and going offtopic
 
I once redone my entire tank, and just used a net and put the fish in another (smaller) tank while I was doing it, then again it was my 35G. I dont know what size you have, though, so It might be different.. I used water from the tank, and they were only in there for a little while.
No harm done.
