How do you prepare freshly caught fish?

Catfish, you need to cut off the stingers that make it look like a cat. I always gut my fish first, be careful on how you hold the fish. I use a nail hammered into a board, hook my catfish on it at the head, cut around the fish, then take a pair of pliers and skin the fish. You will need a rough plastic scraper (used to wash pots with) or a brush to clean the inside of the catfish.

Rinse well,
Gash the sides of your catfish with a sharp knife
Mix, 1 part all purpose flour to three parts cornmeal, salt and pepper, Coat your catfish inside and out
Deep fry until golden brown in a deep fryer or deep skillet with medium high heat.
As for crappies, gut your fish, rinse,scale,cut the heads off at the gill, rinse,
shake in cornmeal mixture as above and deep fry.
