How do you know to add chicken raw or cook it first?

when cooking curries and stuff like that. I've seen a few different recipes, some even for the same dish, and they're all different. One tells me to add chicken breast raw, and the other says I have to slightly brown it first. Same with thighs. Does the consistency of the sauce make a difference in how the chicken cooks while simmering?
