Green shells, you can just move away from them, they don't automatically hit you.
Red shells, you will need to have some bannanas to hit the red shells right before it hits you,
Blue shells are impossible to dogde. If any one finds out please tell me.

For a green shell you just need to move.
For a red shell, the main way is, (like you already said) to drop something behind you. If you don't have anything, you can either try to drive in front of someone else so it will hit them, or try to hit a booster pad. Other than that, I don't know. The reds are meant to hone in on you so they're hard to dodge.
