How do you change the menu hightlight color on an Android 2.1?

I already have LauncherPro, and a variety of other Home screens, so its not that. Its a Motorola XT720, judging by the forums I'm not the only one. I'm prepared to use a software editor like Eclipse, but its not like I want to build an app. I just want to change that stupid highlight/select color (its red).

Any help would be much appreciated.
