How do you change that back round of your home page on your ipod touch? (Jail break?)?

I heard there is something called Jail break....but i would like to change the theme....mine is the normal one and i want to learn how to change it...please enlighten me!!!!!

and i dont mean the front cover...like when you hit the sleep button!!! i mean where all your apps are and stuff!
