How do kickers work in texas hold'em poker?

This was the situation.. there were 4 clubs out, i had a 9 of clubs and she had a Q of clubs.. but since there was an A of clubs out on the table, i thought the hand would be a flush TO AN ACE.. therefore we would have the same hands...

but she ended up winning the whole pot..
 
In any hand It is the best FIVE cards.

This is more common if two people have a pair or two pair since those are easier to get, but your hand is always five cards. In Texas Hold 'em you have shared cards which you choose 3, 4or 5 to be part of your hand.

A Texas Holdem flush can be a little confusing. For clubs each of you takes your five highest clubs. In your case you started with the Ace but since that is shared you go to the next highest. What is comes down to is who has the highest club in their hand unless the five highest clubs are on the board in which case it is a split.

Unless the five highest cards in a flush are on the table there will always be a pot winner for a flush.
