How do I plant this garden with the mud we are "stuck" with?

We live close to a mountain area in which there is alot of slightly hard, red mud for the ground. I want to plant a garden. How deep do I need to dig away the mud and how much soil do I need to put down? Basically, how do I prepare the ground? I am not experienced in the area of gardening and have never been able to keep a plant or flower alive for more than 2 weeks.
 
dig holes the size of 5 gallon buckets , fill them with potting soil, add a plant , and water regularly, and you will succeed !!!!
