Go to a large party store and get a chafing dish kit. They are aluminum foil that have a stand and you put a special chafing dish candle under it. Party city has them.

Hi,
I am making about 4-5 dozen tamales for a party. The party is at an ad agency that does not have a kitchen. we will be setting the food up sorta buffet style. I have a crockpot and was thinking I would stand the tamales up in that on the warm setting but fear it might dry them out. does anyone have suggestions or advice? How do you serve tamales at a big party that ppl won't be immediately eating?

If you can, bring a pan to put underneath your plate of tamales. Fill the pan with very hot water. The steam from the water should keep the plate warm without drying out the food.

I've always used a chaffing dish. You can rent these from party supply stores and they don't cost much. They are basically a double boiler heated with sterno. There is pan of water in which another pan of food sits in. A lid is placed over the food. The chaffing dish is on legs and the sterno is placed underneath.

The food will not get dried out and will stay hot for quite awhile. Chaffing dishes are used by professional catering companies.
