How do I exclude text between two sets of dialogue that I am quoting?

I am writing a formal essay for English where I have to analyze a Short Story.

Here is what I am working with:

Fitzgerald writes, "'That Judy Jones!' remarked Mr. Hedrick on the next tee, as they waited--some moments-- for her to play on ahead. 'All she needs is to be turned up and spanked for six months and then to be married off to an old-fashioned cavalry captain.'"

I want to ignore the text between the two sets of dialogue, but I'm not sure exactly how to go about doing it.

On a side note: While I'm asking this, I'd like to be reaffirmed that I'm correct in using apostrophes for dialogue while quoting text.
