How do I cook lamb chops so they stay moist and soft...?

Grill, pan, oven?

I prefer medium well, my friend prefers pink - I'd rather do both the same way lol.

But when I do mine (in pan) they tend to be 'crunchy' on the outside when I'd rather they were moist.

What am I doing wrong?

I broil lamb chops and no one gets choice of how done they are! They are cooked to my specifications only, medium!

inch or more thick, broil for 5 minutes on each side.
 
Not only do these stay moist, but the gravy is incredibly good over mashed potatoes:

LAMB CHOPS IN WINE
6 lamb chops
1/2 tsp salt
1/4 tsp pepper
flour
oil
Sauce:
1 tsp Worchestershire sauce
1/2 c. sliced mushrooms
1/2 c. white wine (I've also used red)
1/4 c. ketchup
....Flour chops; season with salt & pepper and brown quickly in hot oil. Combine all sauce ingredients. Pour over chops and simmer, covered for 1 hour....... EASY!
 
Bake at 375 degrees F (190 degrees C) for 20 minutes, turn chops over, and cook for 20 more minutes, or to desired doneness.
 
Boil them first with onions etc whatever flavour you want to get into them, it will keep them tender. then throw them in the oven for 15-20 mins to finish.
 
One minute each side on a hot pan. Remove & wrap with tin foil & sit on a plate with another over the top to keep the heat in & leave for 5 mins to rest. Do not put into a hot oven! This cooks the outside nicely & leaves the inside pink. obviously to cook it more thoroughly leave it in the pan for a slightly longer time on each side. You have to practice this until you get it just right as it took me many mistakes before I got mine right. I find pork the hardest to time.
 
Sofia, point one. If they a thin pan fry, but don't let them cook too long, your virtually browning both sides, by the time the second side is browned, they will be done. If they are good and thick these you can do in the oven, put foil over your baking dish, 325 to 350f preheated oven, allow 15 minutes, take foil off, turn the chops over, 10 minutes and they should be done.

Please don't forget to season them first, just a little sea salt and freshly ground black pepper both sides, and what other herbs you may like.

As far as pre boiling like they do with baby back ribs, personally I feel it takes out a lot of the flavor.
