...for high quality dining? I watch a lot of recipes and cooking videos on the internet, and I notice that all the top notch chefs, when talking about their recipes, always seem to say something like "2 tablespoons of butter". They never say anything about margarine.

Is margarine much of a flavor difference, and isn't butter really bad for one's health when eaten often, or used in cooking often?
