I've seen a few sources of information which state the internal temperature of a beef steak has to be between 126 'F - 145 'F for it to be considered a steak cooked medium rare. But the USDA Recommended Safe Minimum Internal Temperature for beef steak is 145 'F. Mainly to kill off diseases. So, I'm just curious as to how you can eat a medium rare cooked steak and not get sick.
