How can you tell when bell peppers have gone bad?

I cut up bell peppers, red yellow and green, into quarters and use 1 quarter of each color per day in my salads for lunch. I keep them in the fridge in a ziploc baggy and am just wondering how to tell when they are no longer good. It has been about a week for the bunch I have today. They look fine and smell fine, but aren't quite as crisp as they were before. The green ones seem to be a little more crunchy than the red or yellow...
