...Conservatives rather than Liberals?
A Liberal is someone who is bringing about change or embracing change, whether good or bad.
A Conservative is someone resisting change, whether good or bad.
A LIberal ideas supports a state run economy (or socialism if you want to call it that).
A Conservative idea is Laissez Faire or a free market economy.

In the case with the Colonists, they were opposed to mercantilism, which is a state run economy. They were for the Laissez Faire system. However, by favoring the Free Market and acting on it, they are bringing about change.

So maybe they were just Classical Liberals. Maybe Liberalism today is not the same as the Classical Liberalism that this country is built on.

Incorrectly. Conservatives in the American Revolution supported the British. The Founding Fathers were liberals and revolutionaries.
