I don't want the phone to get updated with Apple's latest iOS (4.1), because that would lock my phone again, perhaps permanently (hackers have not yet figured out how to unlock the 4.1, and when you try, it bricks your phone). I refuse to deal with AT&T one minute longer, as the suckage of their coverage is only surpassed by the craptasticality of their customer support.
When I plug my new (actually used, I just bought if on craigslist) iphone into my computer, itunes asks me if I want to 'treat this as a new phone' or 'restore it using my latest backup.' the word *restore* worries me! Will it just sync my data, or will it also update my iOS?
