How can I replicate the deliciousness of the fish and chips my mum used to make?

She was taught how to make them in the 50s when she worked in an Italian fish and chip shop in Scotland.
I know she used haddock, and deep fried them in lard.
Oh, they were delicious! I'd like to try to make them just to see if I can, but mum died many years ago, so I can't ask her the recipe
Can anyone help out with some hints and tips?

i believe it is flour fish then dip in batter then deep fry the you have to take out when it floats i think the for fries you put em in then when they float you fish em out?? or i could be wrong cause i ussed to make em in me shop when i was 9.i was good at that they were nice too.i also think it is wait a bit before you eat them cause its hot when its out.very unhealthy but worth killing for,im so sorry ur mom died.you know if the shop is still there ask the shop owner?
