I am a Fashion Designer and until now I had been doing my flats by hand, which is faster by the way, now I have to update my skills in order to get a job in fashion. How can I do the "flats" using the Illustrator? I need Step by Step instructions. I try the tutorials but they do not mention anything about flats. This is a serious question and I am asking for a serious answer so please do not stop here just to get your points, go somewhere else. Thank you

To use Illustrator or Photoshop for your work you need to learn about Layers which is a great feature in both softwares. You can scan the drawing and trace it or drawing it directly in the software. I recommend you learn how to use the pen tool, especially when working with Illustrator, because it is easier to draw a vector image than doing it free hand. Go to Adobe TV so you can find tutorials about both softwares.

I also recommend getting a Wacom tablet.

Your question is quite complex for a full explanation on answers.

Here is a PDF http://www.webpages.ttu.edu/shwang/ADM%203305/Wk2/Lecture%20Wk%202%20Flats%20with%20Adobe%20illustrator.pdf

If you know how to draw them by hand then I would use those skills and incorporate them into the digital tools. I would suggest you go to Lynda.com http://www.lynda.com/home/ViewCourses.aspx?lpk0=393 for intro tutorials and Vectortuts http://vector.tutsplus.com/ for additional learning resources.
