How can I keep family from poking&nibbling buffet dishes BEFORE they are served?

A good hand slap might get the message across. You might have tongs at the food sight like at a salad bar. At least if they want to nibble they should be instructed to use the tongs.
 
I love my family members and our holiday gatherings. Not everyone arrives at once, though. One adult individual and her two young-adult daughters pick and nibble at the food with their (unwashed) hands while they wait for everyone to get there and sit down. It makes me cringe and ruins my appetite, but I hate to say anything. ANY SUGGESTIONS???
 
I would keep the dishes covered.. problem solved. I would also point blank ask them not to do this. For god's sake its your home... take charge. Better yet, keep the food away from the table until you are READY TO SERVE IT.. also.. serve the muchers.. appetizers.. like veggies and dip, chips and the like. Give them small paper plates to serve off of Just an idea
