How can I encourage my dad to eat healthier and exercise?

He's almost 60 and his eating habits are taking a terrible toll on his health. I'm going to try to begin to explain how unhealthy his eating is... In an average day, he'll have an omelette (is that how you spell omelette?? I thought it was right but spell corrector always tells me to spell it omelet!?) for breakfast, then has two breakfast sandwiches from Tim Hortons and an XL coffee (sometimes a baked good as well), eats more Tim Hortons during the day, goes to a fast food joint for lunch and orders two full meals, comes home and eats whatever I cook for him, then half an hour later, no matter how much he's eaten for dinner, he is hungry again and makes a pan of fries, and has a bowl of cereal later. His kind of "snack" is eating an entire bag of chips in one sitting, and he'll easily drink a 2L bottle of Pepsi in a few hours. He downs Pepsi like a frat boy would down beer while play flip cup.

Anyway, I keep having to throw out all these vegetables and fruits because they get moldy, I don't know what to do with them that will give enough flavour to interest him... so if anyone has any recipes, favourite websites, or inspriational tactics, could you please share??

Also, if anyone knows how to make large muffin tops, please let me know!

Also, if it helps any, he loves his meat, so converting him to veg is impossible.. I've tried ;)
