You can't port numbers between countries and I guess you don't want to pay roaming rates so you don't have many options here

Probably a good place to start is your network provider in Italy. You need to ask if you can port a UK number. Assuming they allow it you then need to buy a UK pay as you go SIM and call the provider of that SIM to ask for a porting authority code (pac) then give this code to the italian provider.
