how are oldschool ford engines rebuilt and run brand new when they +30 years old?

normally cars with over 200k (especially domestic, ford.) can't run worth crap after awhile. however my friend who owns a truck has a 351 v8 big block and it runs fine. i just want to know how are these motors, with the age and mileage, continue to still run like champs? seriously, he can drag with them and beat imports and other cars like nothing, it seriously runs very well for a +30 year old engine. my acura couldnt do that, hell i can't even run turbo on it without passing 100k miles
 
Simply put, its the time, money and effort you put into any motor that make it last a very long time. If I bought a 30 year old car, rebuilt the engine / tranny, put some better tires on it and did a tune up on it, it would probably run like a new car (Barring Exceptions). I owned an 87 Stang GT convertable and with nothing more than maintenence, could smoke 90% of the people in imports that challenged me.

PS : Imports can be lethally fast, if you spend enough money on them. Subaru WRX STi, Evo X, Supra TT and so on.
