...are complaining about no meat.? What type of meal should I make? I want to have a main dish and side dishes be vegitarean. But I would also like to have meat dishes for the stupid men who can't just deal with it for a night to be nice. Please help.

I was thinking of lasagna half with meat and half with out meat. But is it good with out meat? And should I add something else? What else can I do? Thank you...Oh she does eat cheese and milk but no eggs I think.
 
lasagna made without meat is very good. but if you want to make some with meat and some without, you need to make them in separate pans. and really, if they cant live without meat for one night for someones birthday then maybe they shouldn't be invited. I know that I would personally be offended if someone served meat at a party that was held for me.
 
Tell them to get over their male egos. Its one night, and at someones birthday party. Least they could do is suck it up and enjoy the food that is being served. they can go home and eat a giant steak after if they want.

Eggplant Enchiladas

1 TBS olive oil
1 cup diced onion
6 cups diced eggplant (peeled)
1 green pepper minced
4 cloves garlic minced
1 tsp salt
1 tsp black pepper
1 cup Monterey Jack cheese
2 cans Rotel (diced tomatoes and green chilis) or your favorite red/enchilada sauce
12 corn tortillas

1. Saute onion in olive oil for about 5 minutes on medium heat. Add eggplant, salt and pepper and cover. Cook 10-15 minutes, stirring often, until eggplant is soft.

2. Add green pepper and garlic and saute about 5 more minutes or until green pepper is soft.

3. Add cheese to egg plant mixture.

4. Roll 1/4 cup eggplant mixture in each tortilla and place in casserole dish sprayed with Pam. After all tortillas have been used and dish is full pour Rotel or sauce of choice over enchiladas. Top with more cheese if desired.

5. Bake 350°F for 30 minutes.

If you're going to provide meat for the other members of the party, you should make sure it is completely and totally separate from all the other food so the vegetarian doesn't have to worry about some cross contamination.

I would suggest burgers or even steak if you want. It's simply to make and can stand alone but still be enjoyed with other foods.
