Hostels' obligation to return despoit and aussie law?

We checked into a hotel 3 days ago that promised to offer us work when we got here. Once we had work we were informed that to receive our hostel deposit back we had to give our hostel landlord and the farmers who employed us 2 days notice if we wanted our deposit back when we left. We worked one day and got paid the equivalent of $5 p/h so decided quite quickly to leave. The landlord will not give us our deposit back even though everything (beds, kitchens etc) is in the same condition we received it with.

Is this legal?

The deposit also covers the cost of replacement keys AND a kitchen pack we received when we arrived containing knife/fork/plate and a basket for our food in the fridge. If we are not getting the deposit back, then technically the key and fridge pack belong to us still and we have a legal right to keep it on departure?

So what I would like to know is - can he keep our deposit if we haven't given 2 days notice to our employer (the farmer, not the landlord)?

Can we keep anything that the deposit covers?
