Look up "condensation". Basically, when water becomes hot enough, it's molecules spread out, vaporize and turn to steam, then evaporates. You cannot see it, but it is still in the air. When it touches a cold mirror, it's molecules condense and form water droplets again. (Same thing happens when you leave a cold Coke on the counter).
